Dumpling Noodle Soup

Ingredients:
3 garlic cloves diced
1/2 onion, sliced
2-3 mushrooms chopped
1 tbsp cilantro and parsley chopped (can sub with green onions)
1 tbsp mirin
3 cups water
1 tbsp soy sauce and vegetarian oyster sauce each
1 carrot chopped into bite size pieces
1 packet of egg noodles
4-5 frozen dumplings
2-3 Bok choy chopped
Toppings:
Fried egg
Gochugaru
Instructions:
Sauté garlic and herbs till fragrant.
Add in mushrooms and onions and cook until softened and mushrooms have caramelized.
Drizzle in mirin to deglaze.
Cook until most of the alcohol has evaporated then add in water, soy sauce, oyster sauce, and carrots.
Add in noodles and dumplings now and boil for 5-7 mins.
Finally add in Bok choy and cook for another 2-3 mins till the veggies have softened.
Enjoy with gochugaru and a fried egg!
