Healthy Breakfast Idea: Menemen

Every culture has their version of tomato and eggs and each time it’s just as delicious. During my recent trip to Turkey, I got to enjoy Menemen again and just had to recreate it at home for myself. Here’s how to make it!
Ingredients:
2 eggs, whisked
1/2 onion, thinly sliced
1 tomato, chopped into triangles
1 green chili pepper, chopped thinly
Fresh cheese (mozzarella)
Green olives
Dill
Instructions:
Sautee onion until softened then add in chopped tomato and cook until tomato has let go of most of its juice
Turn the heat to low, let the pan cool for a min, then slowly add in the whisked eggs
Let the eggs cook until your desired consistency, then fold in the cheese, green chili peppers, and olives — season with salt and pepper
Take off the heat, top with more green olives, a few sprigs of dill, and serve with crunchy bread
