On a cold autumn night, whip up a pot of this pear soup. Not only will it warm your soul but it’ll make your house smell so good.
Cooking time: 20 mins
Ingredients:
1 Asian pear, skinned
1 tbsp of rock sugar
1/2 cup dried dates
1 tbsp goji berries
1 cinnamon stick (can also add 1 slice of ginger and 1 cardamom pod)
3 cups water
Instructions:
Cut pear into bite size slices, then add to a pot of water.
Bring to a boil slowly, then add in the sugar, dried dates, and spices.
Once the soup is at a boil, turn the heat down to medium and cook for another 10 mins.
Add in goji berries at the end, then let it simmer for another 5 mins.
Serve warm.
*You can keep the leftovers for up to a week. Tastes better as it sits.
