30 Days of Easy Dinner Ideas: Day 1 Pumpkin Porridge 🥣
Cooking healthy dinners that don't take up more than 30 mins is a challenge I think all of us face. I'll be sharing what easy dinner ideas I come up with that can all be done in 20 mins or less with just 1-2 pots so you can minimize clean up and eat well!

20 mins, serves 1
Ingredients:
• 1/4 cup rice
• 1/2 cup water + 1/2 cup pumpkin soup
• 1 tsp of kombu tsuyu (kombu soup seasoning)
• 1 egg
• Furikake
• Salmon flakes (grilled salmon that's been fried with a bit of soy sauce, mirin, and sake)
Instructions:
• Wash your rice then place in a pot with the water and pumpkin soup mixed up. Add in the 1 tsp of kombu tsuyu.
• Cover and bring to a boil and cook for 15 mins or until rice is cooked.
• In the meantime, add just enough water to another pot so it just covers the bottom. Add in 1 egg and bring to a boil and cook for 7 mins.
• To make the salmon flakes, marinate salmon in 1 tbsp each of soy sauce, mirin, and sake.
• Broil the fish on high for 6 mins, then tear the flesh up with a fork and finish cooking on a pan until the flakes are nice and crunchy.
• To serve, peel the egg and place on top of porridge. Sprinkle on some furikake, and top with salmon flakes.
