  1. Make dashi soup base for miso soup by bringing kelp (1) and water (4 cups) to a boil, then turn heat off and mix in bonito flakes (½ cup) and let it steep for at least 5 mins (longer the better, so feel free to just let it sit while you’re doing something else)

  2. Strain the broth, bring to a boil, then add in the kabocha squash (¼) + mushrooms (1 bunch)

  3. Turn broth down to a simmer and let it cook for 15 mins

  4. Once squash is soft, add white miso paste (2 Tbsp) (and if you want even more flavor, I recommend adding 1 more tbsp of Awase miso paste)

  5. For the smelt, prep by lightly spraying with avocado oil on both sides (or any high heat oil will work)

  6. Heat the grill up to 450°F then grill the fish for 5 min each side until golden brown

  7. Cook soba (1 bunch) in boiling water for 5 min or until soft

  8. Serve all together with soba dipping sauce
