Easy Crispy Peach Pie in 20 Minutes

Okay imma be honest here…the trick to this pie is NOT USING PIE DOUGH AT ALL
Let me explain
Who wants to deal with pie dough when you can make a crispy pie topping with easy to use phyllo dough? Basically this recipe just needs you to slice up the peaches, toss with some spices and sugar, then simply fold the phyllo sheets on top! That way you finish things up in just 20 mins and don’t even have to clean up flour/butter crumbles that always end up on the floor…

Instructions
- To easily skin the peaches (3), start by slicing a thin cross shape into the bottom of the peach, then placing them in boiling water for 1 min
Immediately shock in cold water, then watch the skin easily peel off from the X cut
Once you’ve sliced the peaches, add them to a rectangular baking dish
To flavor the filling melt 1 tbsp of butter then mix in the sugar (1 Tbsp), ginger (1 tsp), cardamom (1 tsp), and lemon juice (½), and fold into the peaches (3)
Finally, scrunch up the phyllo dough (10 sheets) and place on top of the filling and drizzle with 1 tbsp of butter to help them look nice and brown
Bake for 15-20min at 350°F or until the top is nice and browned
